Avaliação do efeito de variáveis na satisfação de clientes de restaurantes por meio da Modelagem de Equações Estruturais

Resumo

O conhecimento das variáveis que afetam a satisfação do cliente exerce ampla influência sobre o sucesso das organizações. No setor de food service não é diferente, sendo necessário às organizações compreenderem o comportamento e efeito de variáveis para essa satisfação, visto que o posicionamento de mercado exige mudanças constantes. Nesse sentido, a partir da literatura, neste trabalho foi realizado um levantamento de variáveis que influenciam na satisfação de clientes de restaurantes, sendo efetivada a avaliação da relevância dessas variáveis por meio da Modelagem de Equações Estruturais. A unidade de pesquisa foi composta por pessoas economicamente ativas que frequentam restaurantes no município de São Mateus (Espírito Santo), servindo de base para verificação da aplicação. Os resultados permitiram visualizar inter-relações significativas entre variáveis, mostrando o efeito da performance e emoção sobre satisfação de clientes. Esses resultados proporcionaram uma importante base de conhecimento para auxiliar tomadas de decisões no setor de food service, contribuindo com empresários, gestores e governantes na criação de políticas para fidelização de clientes. Apesar do esforço para minimizar possíveis falhas no trabalho, existem limitações que podem ser exploradas em pesquisas futuras, como diferenças nas práticas operacionais e de gestão entre indústrias e empresas do setor. Este trabalho avalia o impacto de cinco variáveis identificadas pela revisão de literatura. A utilização de um contexto de serviço é outra limitação deste estudo.
