Abstract

In recent times food have acquired a great importance due to governmental high spends with population health. According to new concepts of nutrition, food not only cease hunger and provides energy for the organism but also prevent the development of some typical modern life diseases. In this context a new concept of food is emerging: the functional food. The dietary fiber found in food like vegetables, grains and their products, fruits and roots are considered functional food. The present work objective was to evaluate the dietary fiber consumption of a group of aged residents in a shelter. The dietary fiber consumption was below the American Dietetic Association (ADA) recommendation and the vegetables were the major contributor for this consumption.
