Abstract

Introduction: Hospital gastronomy is an innovative trend that allies dietary techniques with the appeal of gastronomy, contributing to the welfare and faster recovery of hospitalized patients. Objective: To apply techniques of gastronomy in the diet of a private hospital in Maringá (Paraná, Brazil) in order to verify acceptance by the patients. Method: A questionnaire for evaluating presentation, aroma, flavor, texture and temperature of food was given to 26 maternity ward patients, who tasted meals before and after interventions. The satisfaction with the meals provided by the Food Services Unit was surveyed, and comments and suggestions were transcribed. Results: There was a significant difference between the diet served by the hospital without modifications and the one offered after modifications. Conclusion: Hospital gastronomy has an influence on the acceptance of diets, and the use of gastronomic techniques should be encouraged in the hospital in order to improve adherence to diets by patients.

Angélica Aparecida Maurício, Universidade Federal do Paraná

Possui graduação em Nutrição pelo Centro de Estudos Superiores de Londrina (1994), mestrado em Ciência da Saúde pela Universidade Estadual de Maringá (2005) e doutorado em Alimentos e Nutrição pela Universidade Estadual de Campinas (2011). Atualmente é professora da Universidade Federal do Paraná. Tem experiência na área de Nutrição, com ênfase em análise sensorial. Professora, atuando principalmente nos seguintes temas: análise sensorial, nutrição, alimento, gluten e soja, gastronomia Hospitalar e redução de sódio.
